Dinosaurs at Red Rocks

Yes, I said, "Dinosaurs at Red Rocks." --Okay, not real Dinosaurs.

We wish, right? How cool.

This summer, we found out that Red Rocks in Morrison was doing the "Film on The Rocks" series and was featuring JURASSIC PARK. The nerdy kid in us all was overjoyed by this, even the dudes in our tribe were "SOO IN!"


This meant of course, -The Collab Girls- would make this an event. We reached out to the crew to see who was in for the journey. Ten of our closest were up for venturing out to Red Rocks and staying up late to watch one of the greatest cinematic events that ever rocked 1993.

Yes, I know. Mrs. Doubtfire, Sleepless in Seattle, Hocus Pocus and Sandlot all came out in 1993. Thus, why I said -'one' of the greatest.

 Red Rocks obviously is one of the greatest places in Colorado and to have it so close to Denver is awesome. The Amphitheater offers all the normal amenities that come with any concert at Red Rocks. Your choice of select food, beer and of course booze. We decided--not cool enough. So we delegated tasks and came up with, Walking Tacos, a few snacks and of course, plenty o'wine

*We actually attempted to sneak in the bag portion of boxed wine and failed miserably. We ain't as sneaky as we think. (Sorry, Johnny).

 Or are we ;)


Also, you cannot bring a selfie stick to Red Rocks. It is considered a weapon. I was actually pretty sad about it. I thought that I wasn't going to be able to find it after the show, but I chucked it way up in the trees and I eventually did locate it after the show. Like ma'am, I am just trying to fit all my friends in one picture! Don't you understand?!  #noselfiestickleftbehind

Back to the Walking Tacos. If you have never had this before, I'll leave a recipe below. It's a Midwest staple and it's perfect for an on-the-go meal. Essentially, it's a taco with all the fixings inside a nacho cheese Dorito's bag. People that noticed our killer chow at the show were absolutely raving about it! "What a great idea", "Why, have we never thought of that?", "Tell me how." I mean, I thought we were cool, but for the walking tacos? Okay, we'll take it.

We met up before the show and "tailgated" at the movie. Yeah, classy as fuck. The first caravan actually got rained on outside, sometimes being late pays off. Wine time, duh. Melissa also ended up bringing a giant bottle of tea vodka that got passed around like courvoisier. It literally got the party started. Pretty sure the majority of us girls were tipsy before the previews even started.

The show doesn't begin until night fall, so clearly there is plenty of time to get your booze on before. The "first act" is typically a mediocre comedian that you can hardly hear and honestly don't care about. I literally can't remember one thing they even said. Jurassic Park was of course a slam dunk, who doesn't love a little prehistoric terror before bed time?

Genuinely, I like any excuse to get boozy with my friends during the week. Throw in Red Rocks, Jurassic Park, and Walking Tacos and I'm a happy girl. The location and scenery make, Film on The Rocks, a summer activity must for friends. Already waiting for next year! Until then, the devious scheme of getting wine into Red Rocks will continue to hatch. Suggestions welcome.


Walking Tacos Recipe-- get it girl:

1 LB. Lean Ground Beef
1 Packet Taco Seasoning

2 Cups Shredded Lettuce
1 Cup Shredded Cheddar Cheese
1 Cup Salsa
1/2 Cup Sour Cream
Personal Sized Doritos Bags - Nacho Cheese (4+) --you're gonna want extra

5 Minute Prep Time
10 Minute Cook Time
Ready in 15!

1. Place 1 LB. lean ground beef in a large skillet. Cook and stir over medium heat until beef is browned. Drain any excess oil. Add taco seasoning and follow directions according to packet. Remove from heat and prepare to serve.

2. Gently crush Doritos prior to opening. Open bag and spoon equal amounts of beef mixture and your choice of toppings. Serve in bag and eat using a fork.

3. Feel free to add more toppings!
